Pittsburgh Fresh: The Lazy Girls Meal Prep

Food delivery is all the rave these days, but when you live in a small city like Pittsburgh, it’s hard to find healthy, local, portion controlled food delivered to your door step. That is, until PITTSBURGH FRESH stepped in to my life. They provide fresh, healthy meals delivered right to your door! I love that this local Pittsburgh company is pushing the limits on making healthy food convenient and accessible for everyone. There is such a need for this service.When is healthy food EVER convenient?! My office is located in what we like to call a “food dessert.” There isn’t a good restaurant around for 20 minutes so Pittsburgh Fresh delivering work lunches to my office is the CATS PAJAMAS (if you will).

Meal Prep Takes A LOT of work to Do It Yourself

It can sometimes feel impossible to meal prep breakfast, lunch, and dinner every week. Plus, I can almost guarantee there are better things you want to be doing on your Sunday afternoon than fixed to your kitchen all day. Let me help you minimize that time in the kitchen by taking lunch (or dinner) out of the picture. Pittsburgh fresh does exactly that.

Shop Local

I love to support local Pittsburgh business’ so when I heard that Pittsburgh Fresh was opening up, I was game to try it. One of my favorite things about this service is that they are local & I know exactly where the food is coming from. I weighed the option of other fancy pants meal services but who even knows where they’re shipped from? I’m sure they’ve been frozen for some time before they make their way to me. Now, the convenience factor is great and I knew of them before placing but order (since their insta is bangin), but the real test would be the flavor. I write a food blog for crying out loud, i’m bound to be a little picky.

Patrick & I (need the guys perspective who’s taste buds haven’t evolved into liking the taste of wheatgrass..) just tried 5 meals.

Here’s what we tried:

Super Salad with Avocado Dressing: Roasted sweet potatoes, roasted beets, baby kale, arugula, chick peas, quinoa, pumpkin seeds, served with house made avocado dressing on the side *GF, Dairy Free, Paleo (can a girl get an amen!) This salad is packed with Superfoods & positively delicious! Reminds me of that line in the Incredible when they say, “honey, where’s my supaaa suite!?” in this case i’m like, “honey, where’s my supppa salad!?” I digress…

Chicken Salad with Avocado Mayo: shredded chicken breast, celery, red onion mixed with house made avocado olive oil mayo, served with fresh fruit * GF, Dairy free, Paleo (halla!)

Smoked BBQ Chicken with Sweet Potato Casserole (antibiotic & hormone free): Smoked chicken breast with BBQ sauce, served with Pittsburgh Fresh’s signature sweet potato casserole made with mashed potato, egg, cocnut milk, a touch of honey, and topped with walnuts and almonds *GF, Dairy free, Paleo (*shwinggg!) Patrick scarfed this one down for dinner the same night I had the Chicken Salad with Avocado mayo.

The Basic: Grilled Chicken w/ Steamed Broccoli (antibiotic & hormone free): Simply seasoned chicken breast served with steamed broccoli *GF, Dairy free, Paleo (thank you, kindly)

Crab(less) Cakes with Quinoa Tabbouleh: crab-less cakes made with garbanzo beans, heart of palm, bread crumbs, vegan avocado mayo, and spices served with quinoa tabbouleh

 

In conclusion, there are a few key things I looked out for when trying these (or any new foods for that matter):

  • Quality – ESPECIALLY in the meat – I love that these chicken meals were all antibiotic & hormone free. I’m a huge proponent of not taking in antibiotics through animals which contribute to the creation of superbugs, limit the effectiveness if we need medicine, and wake out our hormones which control almost every function of our body. I thought the texture & quality of the chicken was really good! They were cooked just right and seasoned well (keeping it really light).
  • Added Sugars – those suckers are everywhere… they’re in almost everything you buy pre-prepared so finally we’ve found a solution to the store bought convenience of pre-made food with the confidence in the ingredients as though we made it at home. Thank you for none of these Pittsburgh Fresh.
  • Preservatives – to my knowledge, they don’t use any preservatives. Importante! Preservatives are impossible to digest, known to cause cancer, weight gain, asthma, allergies, and more). You have to freeze these if not eating within 5 days which leads to me to believe they’re preservative free and I love it!
  • Clear Labels – beyond labeling every meal with notes such as GF, Dairy-Free, Paleo, Pittsburgh fresh shares their full list of natural ingredients (all of which we can pronounce, thank you!), nutrition facts, reheat directions, and transparent lids. This is a company going for transparency and I am in FULL FULL support of their mission.

    I was visiting Pgh recently for a few weeks, and I tried all the delivery apps – all were dissappointing or did not deliver to the Mt. Lebanon area. So thank you for the tip, next time I’m in the ‘burg I will surely try this!

      When you come into town next you can load up on delicious meals that won’t disappointed.. no groceries needed. They have vegetarian options too!

GF SUPER HERO WAFFLES 🧇 Every once in a while GF SUPER HERO WAFFLES 🧇 

Every once in a while a new hit recipe comes across our table and I just have to share. These waffles are packed with goodness and actually taste fantastic & have a nice fluffy texture. Next time your kids ask for waffles, you can feel good about serving these up. 

Also — I’m loving summer but these cooler mornings have me unapologetic about cooking up some pumpkin in the morning… it’s coming! 🎃

INGREDIENTS:
• 3/4 cup natural almond butter
• 1 medium very ripe banana
• 1 big dollop maple syrup (up to 1/4 c if your kids like um sweet)
• 3 large eggs
• 1/2 teaspoon baking soda
• 1 cup loosely packed spinach
• 1/4 cup pumpkin puree
• 2 tablespoons chia seeds
• 1 teaspoon vanilla extract
• 1 teaspoon cinnamon
• oil for greasing

Instructions:
Heat up waffle iron and brush a little oil on both the top and bottom griddle.

Combine all remaining ingredients in your blender. Run until smooth. Scrape down the sides of the food processor if needed and run to ensure that all ingredients are incorporated.

Pour about 1/4-1/3  cup of batter onto the griddle, just enough to make a pool in the middle of the griddle. I find that if you over fill the waffle maker, the waffles will not cook through or will require more cook time.

Close waffle iron for about 2-4 minutes (depending on how hot your waffle iron cooks). You will know your waffle is done when steam stops coming out of your waffle iron and the waffle looks golden brown on the outside.

Waffles may be a bit soft when fresh out of the waffle iron, but should hold together.  They will crisp up after a minute or two.

There’s one time every year where we are brought There’s one time every year where we are brought to our knees again and pray that all the love we pour into our little lady is enough to give us a clear report. So glad to report all scans look great 😊. 

The yearly check-in also comes with some reflection on things I wish I could have known 4 years ago when we were looking at a scary anatomy scan we knew nothing about. So, if that’s you I hope this finds you like other mother’s posts found me.

1. The medical stuff is hard but loving her is the easiest thing you will ever do.

2. It’s her timing, not yours. Things have always come “late” to Harper but in her time she has shown us what she’s capable of. Never count her out and always remind her how capable she is.

3. Over time those doctors that you found to be overwhelming become a safe place to you. But that’s only if you do not settle for mediocre care and advocate for the best. @gregorygheuer @matthewdobbsmd 

4. If you don’t have the answer for something there is a mom out there somewhere that has figured out a work around. The moms are insanely impressive. 

5. Your joy in life is not driven by your set of circumstances - it’s driven by your decision, your perspective, and your faith. Don’t forget that choice is always yours and your child is watching.

POV — you hire a hand model for your filling PRO POV — you hire a hand model for your filling PROTEIN PUMPKIN MUFFINS & she knows just what to do (raises pinky and poses).

INGREDIENTS —
• 1 1/4 cup pumpkin puree, not pumpkin pie filling
• 1 cup cooked and cooled green lentils, about 1/3 cup dry. See above for cooking suggestions
• 2 large eggs
• 1/4 cup melted coconut oil
• 1/3 cup maple syrup or honey
• 2 teaspoons vanilla extract
• 2 teaspoon apple cider vinegar
• 1 1/4 cups oat flour
• 1 teaspoon baking soda
• 1 teaspoon baking powder
• 2 teaspoons pumpkin spice
• 1/4 teaspoon salt

INSTRUCTIONS: 
Preheat your oven to 350℉ and line a 12-hole muffin tin with liners. Set aside.

In your blender, combine pumpkin puree, cooked lentils, eggs, coconut oil, maple syrup, vanilla, and apple cider vinegar. Blend until mixture is smooth and set aside.

In a medium bowl, combine flour, baking powder, baking soda, salt and pumpkin spice. Mix.

Pour the contents of the blender into the bowl with the dry ingredients. Mix until just combine. DO NOT over mix. Over mixing can lead to dense, flat muffins.

Portion batter into prepared muffin tin.

Bake for 20-22 minutes or until a toothpick inserted into the middle comes out clean.

Let cool in pan for 5 minutes before transferring to a cooling rack. Enjoy and let cool completely before storing any leftovers in an air-tight container in fridge or freezer.

10/22 ✨ Diagnosis Day The day that marked life 10/22 ✨ Diagnosis Day

The day that marked life before this day and after. A terrifying day full of such uncertainty. A day I reached for my phone and found my now friend @mrstristinapon little girl Bryn and saw how full of life she was! 

Now it’s a day I’m learning to celebrate for the absolute unique shine my girl has and gosh am I proud of her & love the life we’ve built!

Now 10/22 is a day I can share our joy in hopes a newly diagnosed family needs to see that big joy can exist among the challenges that come with a Spina Bifida diagnosis. God has a plan greater than any of us can possibly know.

5 years feels really big ❤️ The past five yea 5 years feels really big ❤️

The past five years have been full of *life* — foremost, full of blessings greater than I could have ever imagined. God has moved in us in ways we didn’t know were possible. 

Interwoven Himself in our relationship and who we’ve become as people, even when we were sure he wasn’t working.

We became a family once and then again.

The past 5 years have been full of life altering challenges too. The kind that change you forever - more than one of them.

Thinking back to what has survived these 5 years —  it’s abounding LOVE, peace, romance, and trust. 

To 50 more, my hubby (who will never see this). ❤️

Don’t worry - it’ll be 5 more years until you get another sappy post from me.
