You want to talk about having fun while cooking?! Nothing says girls night quite like crafting up your own healthy pizza, sitting on the balcony, and chatting for hours.
One of my friends won the a #giveaway of mine as I partnered with Pittsburgh Fresh to give away 3 free meals – people were hyped! Amy won because I asked for my followers to share 1 meal they’d like to see from me and she requested “Healthy Pizzas” (in an Oprah voice) which had me laughing out loud. I appreciated her enthusiasm in the giveaway so not only did she win the Pittsburgh Fresh meals, but she won Healthy Pizza night with yours truly (see what a little engagement & enthusiasm can you you, followers?!).
We started the night with a Pittsburgh Fresh Berry Salad because it was a tasty dose of fruits & veggies just staring at us from my fridge.. already prepared. That’s the magic of those babies.
The “healthier” factor of these pies is in the cauliflower pizza crust. Already prepared and waiting for you in the freezer section of Trader Joes! Soon very soon I’m going to try my luck at making my own, but in the meantime, this makes healthy pizza pies a breeze.The Recipes:
Amy has no problem with cheese so she made the crowd pleasing classic margarita with a spicy twist;
The Amy aka "The Jiblet"
Ingredients
- 1 Cauliflower Pizza Crust
- 2 tbsp Rustico Marinara Sauce Trader Joes Brand
- All Natural Mozzarella
- 1 qtr Green pepper
- 1 tbsp Crushed Red Pepper
- 1/4 cup Portobello mushrooms chopped thin
- 1/4 jalapeño
Instructions

Preheat oven to 450.

Place the frozen pizza crust on a baking sheet and bake for 15 minutes or until it begins to turn golden.

Flip over the crust and bake another 15 minutes or until desired crust crunchiness is attained (do not UNDER cook these, they taste mealy unless baked until crispy)

Add desired toppings (these measurements are approximate) & bake for 10 more minutes.

Cut into slices & enjoy!
I, on the other hand, have a dairy sensitivity (but goat cheese doesn’t seem to upset my stomach). This did not keep me from losing out on any flavor, let me tell you!

- 1/4 cup Healthy Pesto see previous post
- 1/4 cup Cherry Tomatoes
- 1 pinch Chèvre with honey goat cheese Trader Joes Brand
- 1/2 cup Grilled chicken pulled
- 1/4 cup Sautéed mushrooms
- 1/2 cup Fresh Arugula
Instructions

Preheat oven to 450.

Place the frozen pizza crust on a baking sheet and bake for 15 minutes or until it begins to turn golden.
