Summer is officially upon us! When the weather gets warm and pool parties start happening, I crave icy, sweet, and refreshing popsicles. Not to mention, I bought these popsicle molds at the grocery store a few weeks ago anticipating this project so I had to put them to WORK. I tried a few recipe variations; some chocolately, some fruity, but this final result brought together the best of both worlds… the Healthy Raspberry Creamsicle! With a little more practice, I’ll soon try putting together a boozy popsicle recipe for poolside endeavors… until then, eat your raspberries, kids!
I legit couldn’t stop eating this raspberry creamsicle mixture even before freezing it.

Healthy Raspberry Creamsicles
Ingredients
- 1 can full fat coconut milk
- 4 tbsp honey
- 12 oz frozen raspberries 1 package
- 2 tsp lime zest
- 5 tbsp fresh lime juice
Instructions

Combine the honey with the full can of coconut in a blender and blend on high until fully mixed. Set aside 1/3 cup of this mixture but leave the rest in the blender.

Add the banana, lime, lime zest, and raspberries to the blender and blend on high until smooth.

Pour the reserve 1/3 coconut milk into the popsicle mold first and place in freezer for 10-15 minutes.

After the coconut mixture has hardened slightly, add the raspberry mixture on top. For a swirl, add the raspberry with a little force. To keep the coconut and raspberry mixture separate, pour very gently.

If you’re using sticks, freeze 15 minutes and then apply the sticks. If using molds, skip this step.

Freeze overnight and enjoy!
I tried keeping these low sugar after my sugar research and I think this is just about as good as you get with limited added sugar (which is natural and not refined).
I had some taste testers over for the final approval of the raspberry creamsicle before posting and I wouldn’t be posting if this wasn’t 2 thumbs up best friend approved! Share these with a friend, enjoy by the pool, and don’t feel an oz of guilt about it.
Side Note:
You may notice that green popsicle in the back of the mold here. It’s my green pineapple smoothie recipe that I made a bit too much of so I froze it in a mold for a snack! It’s a great hack to limit your waste if you aren’t going to finish the smoothie and perfect for when hunger sets in and you need something on the go and refreshing! You can do this with any smoothie or probably cocktail. I’ll be doing some R & D on the cocktail popsicle front! Hard work, but someone’s gotta do it.
