Introducing: HEALTHY STARBUCKS SWAPS. I’m so excited to share this video and these recipes! It’s one of the most FUN things i’ve done for the blog to date. We’re featuring healthy breakfast and coffee options at Starbucks when you’re on-the-go and how to upgrade these drinks and meals at home to make them healthier and more flavorful!

My girlfriend Celina Pompeani and I were just dying to do a video together. We spent some time thinking about what we know WELL and can share with the world. For Celina, it’s coffee. This girl has spent the last 5 years waking up at 4:30 to do morning news and stays up late as the spokesperson for the Pittsburgh Penguins. She is the ultimate on the go, accomplished, chick… and is no stranger to the inside of a Starbucks. For me, I spend a brief moment at almost every place I eat, thinking how I could remake this delicious food healthier at home – something Patrick always makes fun of me for!

Breakfast Combo 1:

Starbucks Cafe Misto paired with Starbucks Egg White Turkey Bacon Sandwich

Servings 1

Ingredients

  • 8 oz hot brewed coffee Bulletproof brand
  • 1 scoop collagen protein Bulletproof brand
  • 4 oz unsweetened almond milk (Malk brand or homemade) steamed
  • 1 dash cinnamon

Instructions

  1. Brew the coffee

  2. Add a scoop of collagen and combine fully with a hand frother / mixer

  3. Froth the milk with a milk frother and lay on top of the coffee

  4. If you don't have a milk frother, blend all ingredients and pulse on high until the mixture is frothy. it's not quite the same but better than nothing!

homemade almond milk – If you can make your own milk, it takes your coffee to the next level! If you don’t have time, the brand Malk has the least added preservatives. I have an older post on how to make your own almond milk if you’re interested!

Gluten Free Turkey Bacon & Egg Breakfast Sandwich

Servings 1

Ingredients

  • 1 gluten free sprouted grain english muffin prefer Food for Life brand
  • 1 organic egg prefer Vital Farms
  • 2 slices uncured turkey bacon prefer Applegate
  • 1 slice raw cheddar cheese optional

Instructions

  1. Toast english muffins

  2. Cook turkey bacon. I like to bake the whole pack in the oven at 400 degrees for 20 minutes but you can cook in the pan if you prefer.

  3. Fry egg in a lightly sprayed pan (avocado oil is best here)

  4. Add HOT turkey and egg to english muffin

  5. Add one slice cheese to the top and close the english muffins

Major nutrition comparison:
  • Starbucks Misto: 110 calories, 4 grams fat, 10 grams carbs, 10 grams sugar, 7 grams protein
  • Say Jess Please Misto: 89 calories, 4.5 grams fat, 3 grams carbs, 0 grams sugar, 9.7 grams protein
  • Starbucks Breakfast Sandwich: 230 calories, 5 grams fat, 28 grams carbs, 2 grams sugar, 17 grams protein
  • Say Jess Please Breakfast Sandwich: 330 calories, 8 grams fat, 31 grams carbs (higher because higher fiber), 0 grams sugar, 24 grams protein

Breakfast Combo 2:

Starbucks Matcha Latte paired with Egg Bites

Healthy Collagen Matcha Latte

Ingredients

  • 1/4 cup hot water
  • 1 scoop Vital Proteins Matcha Collagen
  • 8 oz Unsweetened almond milk Malk or homemade
  • 1 dash Cinnamon

Instructions

  1. Using a whisk or hand mixer, blend hot water and matcha

  2. Side note: if you don't have matcha collagen, swap with a tbsp matcha and scoop of collagen

  3. Add the hot steamed milk to the top of the matcha mixture and mix together

  4. Top with generous dashes of cinnamon

Say Jess Please Breakfast Egg Bites

Servings 6 bites

Ingredients

  • 1/4 cup water
  • 2 cups kale chopped
  • 3 whole eggs
  • 3 egg whites
  • 1/4 cup cottage cheese
  • 2 links spicy Italian chicken sausage from the meat counter (I like Whole Foods or Fresh Market)
  • 1 tsp parsley
  • 1/4 tsp sea salt
  • 1/4 tsp pepper
  • non stick avocado oil spray

Instructions

  1. Preheat oven to 300 degrees and place a baking dish that is filled with 1-2" water on the bottom rack. This will create a humid environment to help the eggs cook evenly

  2. On the stove, sautee the spicy chicken sausage (remove the casing and break up the meat so its like ground meat). Set aside.

  3. Spray a large saute pan with avocado oil. Warm the oil to medium high. Cook the garlic for 3 minutes or until it begins to brown. Add the kale and a bit of the water. Stir until the kale is wilted. Add the chicken sausage and everything together until it's evenly distributed.

  4. Bring out your blender. Add the eggs, egg whites, cottage cheese, parsley, salt and pepper and blend on high until it's light and frothy.

  5. Spray a muffin tin with a little avocado oil and fill the tins with the egg mixture. Add in spoonfuls of the kale & sausage mixture split between the 6 muffin tins.

  6. Bake for 30 minutes, or until the center of the egg bites are just set.

  7. Remove the eggs from the oven and let cool for 5 minutes. Enjoy!

  • Starbucks Matcha Latte: 240 calories, 7 grams fat, 34 grams carbs, 32 grams sugar, 12 grams protein
  • Say Jess Please Collagen Matcha Latte: 156 calories, 9 grams fat, 7.1 grams carbs, 2 grams sugar, 13 grams protein
  • Starbucks Egg Bites: 230 calories, 14 grams fat, 11 grams carbs, 1 gram sugar, 15 grams protein
  • Say Jess Please Egg Bites: 288 calories, 12 grams fat, 7 grams carbs, 1 gram sugar, 34 grams protein

Vitamin C Shock Therapy 🍊 By popular demand I Vitamin C Shock Therapy 🍊 

By popular demand I’m making this concoction a permanent fixture on my feed. Save it for when you or anyone in your family starts to get sick and adjust the dosage based on age (per the @medicalmedium guidelines). I even take this when I’m starting to get a cold sore to kill the virus and I swear by it!

For @medicalmedium Vitamin C Shock Therapy for adults, the ingredients are:
• 2 500-milligram capsules of @vimergy Micro-C
• 1 cup of water (preferably warm)
• 2 teaspoons of raw honey
•  freshly squeezed juice from one orange.

Here’s how to prepare it: 
Open the Micro-C capsules and pour their powder into the warm water. Stir (I use a frother) until dissolved. Add the raw honey and orange juice and stir well.

Starting at the first sign of cold, flu, or viral infection, drink this tonic every two hours during waking hours. You can do this for two days and then switch to the dosage in an individual supplement list, or you can use this technique throughout the duration of a cold or flu.

For children, here are the adjusted amounts of vitamin C for this supplement therapy (from the medical medium book):

• Ages 1 to 2: 1 500-milligram capsule
Micro-C emptied and mixed with 1/2 cup water, 1 teaspoon raw honey, and the freshly squeezed juice from half an orange, every six hours during waking hours
• Ages 3 to 4: 1 500-milligram capsule
Micro-C emptied and mixed with 1/2 cup water, 1 teaspoon raw honey, and the freshly squeezed juice from 1 orange, every five hours during waking hours
• Ages 5 to 8: 1 500-milligram capsule
Micro-C emptied and mixed with 1
cup water, 2 teaspoons raw honey, and the freshly squeezed juice from 1 orange, every four hours during waking hours
• Ages 9 to 12: 1 500-milligram capsule Micro-C emptied and mixed with 1 cup water, 2 teaspoons raw honey, and the freshly squeezed juice from 1 orange, every two hours during waking hours
• Ages 13 and up: 2 500-milligram capsules Micro-C emptied and mixed with 1 cup water, 2 teaspoons raw honey, and the freshly squeezed juice from 1 orange, every three hours during waking hours

EGGPLANT 🍆 MOUSSAKA This dairy free/gluten fre EGGPLANT 🍆 MOUSSAKA

This dairy free/gluten free dinner dish tastes anything but. It is packed with rich flavor and is always a special treat in our house. It’s been on my heavy rotation for some time now.

INGREDIENTS:
Veggie Layers:
- 3 TBSP avocado oil, plus more for the pan
- 1 small sweet potato
- 2 medium eggplants, cut lengthwise into 1/2 inch thick slices

Meat Sauce:
- 2 TBSP avocado oil
-1 large white onion, minced
- 1 fresno Chile, seeded and minced (I often make it without this and it’s still delicious)
- 4 large garlic cloves, minced
- 2 pound ground lamb
- 1 TBSP smoked paprika
- 1 1/2 tsp ground cumin
- 1 tsp ground cinnamin
- 1 TBSP pink Himalayan salt
- 1 TBSP freshly ground black pepper
- 6 TBSP tomato paste
- 1 tomato, seeded and chopped
- 2 TBSP tightly packed chopped fresh mint

Creamy Bechamel Sauce:
- 2 TBSP ghee
- 1 cup almond flour
- 1 (15-oz) can full-fat unsweetened coconut milk
- 1 1/2 tsp ground nutmeg
- 1 1/2 tsp teaspoons freshly ground black pepper
- 2 large egg yolks

DIRECTION:
1. Preheat oven to 425F. Cover the eggplant with the avocado oil. Place the eggplant slices on a baking sheet and bake for 15-20 minutes or until tender and browned. Remove the eggplant and set aside. Reduce the heat of the oven to 400F.

2. Meanwhile, prepare the sweet potato by cutting it into 1/4 inch thick rounds and set aside. 

3. Meat sauce: heat the avocado oil in a large pot over medium high heat. Add the onion and sauté 5-10 mins. Add the chile and garlic and sauté for 5 minutes. Add the lamb, smoked paprika, cumin, cinnamon, salt, and pepper and cook until the meat is fully cooked. Add the tomato paste and chopped tomato and cook until all the liquid has evaporated. Add the mint and oregano, stir for 2 minutes, then remove from heat. 

4. Béchamel: In a saucepan, melt the ghee over medium heat. Add the almond flour and whisk constantly until fully combined. Whisk in the coconut milk and bring to a boil. Add the nutmeg and black pepper and cook, stirring for about 5 minutes, until the mixture thickens. Remove from heat and quickly stir in the egg yolks, one by one.

When I first embarked on my wellness journey, I think I was in middle school. At that time, being "well" meant being skinny. 

But we evolve.

Today, that couldn't be further from the truth. Today, it's living out something BIGGER than myself, not making myself smaller. 

It's finding peace in my circumstance. It's treating myself with respect.
It's listening and learning from other people.
It's nurturing and embracing my family, fostering community.
It's not turning my back on people that make me feel uncomfortable.
It's diving deeper into my faith.
It's therapy; getting to know myself on a deeper level.

So, if it looks like i've changed... you're right! Proud change agent over here. Whatever could be next :)
